Quick Chilaquiles with Huevos (Delicous, but not authentic)

This is a simple and delicious dish made with tortilla chips coated in salsa and topped with cheese, avocado, and other garnishes. Chilaquiles originated in central and northern Mexico, with roots tracing back to the Aztec Empire. Rather than discard them, cooks would repurpose stale, leftover tortillas by softening them in chili sauces.

Chef's notes#

This is my non-authentic but still delicious take on chilaquiles. It makes 4 servings, and is an easy weekend breakfast (or weeknight dinner) that can be whipped up in about half an hour. Toppings like raw onions and cilantro are purely optional. (I don’t buy cilantro very often, because most of it ends up going bad in my fridge if I forget to use it.)

Directions#

  1. Cook the beans in a medium saucepan until thickened, keep warm and set aside.
  2. Heat the salsa and broth together in a large saucepan to boiling.
  3. Stir in and crumble the chips, coating them with the salsa mixture.
  4. When the mixture comes to a simmer, cover the pan and remove it from the heat.
  5. Let stand for 5 minutes.
  6. Fry the eggs in a large frying pan, using butter or ghee for a crisp edge. Allow the yolks to stay runny. Add pepper to taste.
  7. Spoon tortilla mixture onto warmed plates.
  8. Spoon beans onto the plate next to the tortilla mixture.
  9. Top each plate with a fried egg.
  10. Add sliced avocado and tomatoes.
  11. Add cheese, sour cream, onion, and cilantro, as desired.
  12. Add extra dry chips as desired.
  13. Serve right away.
