Chef's notes#

Chicken notes :

  1. You can tenderize the chicken if you want (makes for a "bigger" piece that will cover more waffle also speeds up cook time)

  2. If you choose not to tenderize your chicken and are left with thicker thighs, Fry until the crust is a nice golden brown then finish baking the chicken in the oven (around 350F) to finish cooking the chicken through. Should only take about 10 or 15 min.

Flour and dredge notes :

  1. Feel free to add more spices into the flour here. Add some extra onion, garlic and paprika or some fresh oregano to give the crust an extra kick of you want. Experiment and play with the flavor here and in the buttermilk marinade.

Waffle notes :

This is mostly a base recipe for savory waffles if you like things sweet add some sugar and some Vanilla extract to the waffle.

Directions#

  1. Start by marinating your chicken. Get your thighs, buttermilk, paprika, onion powder, garlic powder, salt and pepper into a bowl or plastic bag and set aside to marinate for at least two hours in the fridge. (up to 4)
  2. The batter can be made ahead of time as well (no more than a few hours preferably).
  3. Mix all the dry ingredients together (minus the chives and cheese) then add the liquids.
  4. Add cheese and chives (save a bit for a waffle topping if you want.)
  5. Once the chicken has marinated a bit dredge your chicken in flour (see notes). Let set for approximately 20 min after dredging.
  6. Fry tell done. Also start to cook waffles while the chicken is cooking.
  7. Top the Waffles with the chicken, the extra cheese and chives, a healthy splash of syrup, plus your favorite hot sauce and Tuck in!
