Chef's notes#

This is my go-to crispy bread recipe that can be made in just one hour, with no rise time. All you need are a few ingredients you already have, plus a can or bottle of beer. Cheap beer works fine, the alcohol bakes out leaving you with just a delicious loaf that can be sliced and served warm, on its own, or with any sweet or savory topping you like.

Directions#

  1. Prep the oven and pan: Preheat your oven to 375°F (190°C) and grease a 9x5-inch loaf pan
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar
  3. Add the beer: Pour in the 12 oz beer and stir gently just until the dough comes together and no dry flour remains (do not over-mix)
  4. Transfer and butter: Spread the thick batter evenly into your greased loaf pan
  5. Pour the melted butter evenly over the top of the dough
  6. Bake: Bake for 50 to 60 minutes, or until the top is deep golden brown and a toothpick inserted into the center comes out clean
  7. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack. Slice and serve warm
